Gluten Free Ice Cream Tacos + Happy Memorial Day Weekend!



The steam coming from the waffle cones smells like vanilla and melted sugar (think main street USA) *crying*.

Ice cream tacos? Get out! And did we mention that everything is 100% gluten free? Since Lulu is gluten intolerant, our baking projects turned science experiments tend to be a bit fancy. 

Are you a fan of all things “gluten full”? (aka bread is your life source) no worries! The waffle cone recipe works great with all purpose flour.

Taco Shells (makes aprox. 20 taco shells, 3-4 inches in diameter)

  • 2 eggs
  • 1/2 cup sugar
  • 1/4 cup melted butter
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1/3 cup gluten free flour blend, here’s the brand we use
  • non-stick cooking spray

1. Whisk together eggs and sugar until light in color and frothy. Add butter, milk and vanilla.

Gradually add flour, being sure not to over mix. The batter should be thin.

2. Lightly coat your waffle cone maker‘s heating plates with non-stick cooking spray. Pour 2-3 tablespoons of batter onto the iron. Then close the heating plates and cook until the edges of the batter are golden brown. Using a spatula, remove your soon to be taco shell from the heat and place it in a taco shape to set.


  • Gluten free ice cream, this is the brand we like.
  • Gluten free brownie’s, we used a mix from Trader Joe’s.
  • THE MOST DEVINE CHOCOLATE CHIP COOKIES ON THE PLANET, you guessed it, also gluten free. We will post the recipe shortly.

  • Whipped cream
  • Chocolate sause
  • Maraschino cherries
