Fashionably Late, Happy National Doughnut YEAR!


We’re rugged individualists.

So why in the world would we do a doughnut themed post in time for national doughnut day???

According to us, National Doughnut Day is everyday. There, case closed ūüôā

If you’re¬†in the mood for a summer ready, pineapple- coconut treat, then you’ve come to the right place. On to the recipe and purdy pictures!!!



  • 1 1/3 cups all-purpose flour
  • 1/3 cup white sugar
  • 1 Tablespoon baking powder
  • 1/2 cup milk
  • 1/4 cup coconut oil
  • 1/4 cup greek yogurt
  • 1 teaspoon vanilla
  • 1 teaspoon coconut flavoring
  • Frosting/toppings


Combine the flour, sugar, and baking powder in a medium sized mixing bowl.

In a separate bowl, whisk together the milk, coconut oil, greek yogurt, vanilla and coconut flavoring.

Fold the wet ingredients into the dry ingredients. Be sure not to over mix.

Using your doughnut maker (this is the one we use), bake the doughnuts until golden-brown.


Coconut Frosting

  • 1/2 cup butter
  • 2 1/2 cup powdered sugar
  • 2-4 Tablespoons milk
  • 1 teaspoon vanilla
  • 1 teaspoon coconut flavoring
  • a pinch of salt (optional)


With an electric mixer, whip the butter until it is slightly lighter in color. Then add the powdered sugar 1/2 cup at a time. Add 2-4 Tablespoons of milk until you reach the desired constancy. Add the vanilla, coconut flavoring and salt (the pinch of salt balances out the sweetness of the powdered sugar, but it is completely optional).

Pineapple Curd Topping

  • 1/2 cup white sugar
  • 1 1/2 Tablespoons cornstarch
  • 1/2 cup milk
  • 1/2 cup pureed¬†pineapple (we tossed a few handfuls of fresh pineapple into our blender)¬†
  • 2 egg yolks, beaten
  • 2 Tablespoons butter
  • 1/2 cup greek yogurt


In a medium sauce pan, whisk together the sugar and cornstarch. Then whisk in the milk, pureed pineapple, and egg yolks. Stir constantly over medium heat until it begins to boil. Once it reaches a boil, cook for 1 minute, then remove it from the heat.

While your glorious curd is still warm, stir in the butter. Once it has cooled completely, fold in the greek yogurt.
